Modern Bakery, part of the SwirzGroup group, is looking for Chief Production Manager for confectionery production with relocation in Oman. Knowledge of English required.

We are looking to hire an experienced production manager to supervise our baking/pastry staff and manage all bakery operations. The chief production manager will directly report to the Retail Director. The production manager needs to have a strong “hands-on” approach and his/hers responsibilities include maintaining accurate financial records, conducting interviews, hiring suitable staff, and ensuring that orders from different departments, external customers, shops for bread, pastries, savories, counter cakes, specialty cakes etc. are completed on time. You should also be able to discard stale or spoiled bakery/pastry items and markdown goods nearing their expiration dates.

 

Production Manager Responsibilities:


 • Ensuring that the production is adequately stocked with quality baking ingredients and supplies.
 • Ensuring that baking tools, utensils, and equipment are properly cleaned and sanitized and in safe working condition
 • Creating suitable work schedules for staff members
 • Appraising staff performance and carrying out the necessary disciplinary measures to address poor performance
 • Training staff to produce high-quality bakery/pastry items while following proper food handling procedures. Setting periodic objectives, and inspiring their personal growth and development.
 • Monitoring the Production Processes and adjusting schedules as needed. Assure the meeting of quality expectations by maintaining and managing controls and continual personal inspection of production and process
 • Supervising and motivating a team of workers. Seek ways to improve the process and quality while reducing costs.
 • Inspecting bakery items to ensure that established standards on quality, uniformity, and aesthetic appeal are met.
 • Resolving customer complaints in a professional manner
 • Recipe and product development
 • Forecasting for public holidays and special occasions
 • Establish and Maintain effective relations with the Management team (Materials Supply, Management, Hygiene, Accounts, Maintenance) and Suppliers and Customers
 • Schedule and run weekly production meetings, to track progress and coordinate efforts
 • Report in advance to maintenance any issues of equipment that is not working properly
 • Perform other duties as assigned by the management team 

 

Production Manager Requirements:


 • High school diploma
 • Associate's degree in culinary arts or baking and pastry arts is advantageous.
 • Proven experience managing a bakery
 • Sound knowledge of different baking techniques
 • The ability to work under pressure
 • Ability to behave decisively
 • Patient and self-confidence, good judgment
 • Ability to grasp complex concepts
 • Self-driven and pro-active
 • Outstanding problem-solving skills
 • Excellent planning, negotiating and organizing skills

 • HACCP certified 
 • Computer skills
